Frittata

The perfect black hole for all your ingredients that need using up.

Ingredients

The filling

  • 1 Tbsp Olive oil
  • 1 Tbsp Butter
  • 1 Small Broccoli
  • ½ Cup Frozen sweet corn
  • 2 Tbsp Sun dried tomatoes Cut into bite size pieces

The egg mixture

  • 9 Eggs
  • 100 Ml Double cream
  • 50 G Cheddar cheese

Instructions

  • Preheat the oven to 180°C.
  • Break the broccoli into florets and cut the larger ones in half. Peel the stalk and cut into cubes.
  • In a bowl, whisk the eggs, cream and grated cheese, and season with salt.
  • In a large oven-safe pan, melt the butter and oil.
  • Add the broccoli, season with salt, and sauté for about 5 minutes, stirring occasionally.
  • Add the corn and sundried tomatoes, stir, and pour in the egg mixture.
  • Transfer the pan into the oven and bake for about 10 minutes, until the frittata is set and lightly golden.
